ANFACO BRINGS OUT THE FULL POTENTIAL OF CANNED FOOD AT MADRID FUSIÓN

In 2023, Anfaco decided to showcase the infinite creativity of canned food at Madrid Fusión. The employers’ association organized tastings and showcookings at the gastronomic congress to demonstrate that canned fish and seafood cannot be missing in homes and restaurants.

In an edition in which Madrid Fusion has chosen the slogan Gastronomy without limits, canned fish and seafood have seen an opportunity to demonstrate the “infinite creativity” that they offer to haute cuisine. Thus, the employer’s association Anfaco, in collaboration with the Consellería do Mar, will promote these products in the stand of the Xunta through tastings, samplings and showcookings to show that cans can never be missing in homes and restaurants.

The practical demonstration will be given by Miguel F. Vidal, chef and owner of Morgana and Mai e Matucha, in Madrid, who will prepare tuna belly with Thai tomato tartar, mussels in yellow chili and salicornia pickle, potatoes with cockles, scallops in scallop sauce with coconut and yuzu emulsion or bolo with squid in its own ink. These are some of the dishes that attendees will be able to taste if they come to Anfaco’s corner.

Its partner companies Stolt Sea Farm (tomorrow, at 1.30 p.m.) and Casa Santoña (the day after, at 3 p.m.) will also give a culinary demonstration. Also, products from the companies Conservas Ortiz, Cabo de Peñas, Frinsa, Ubago, among others, will be available for tasting. Likewise, other companies linked to the association, such as Balfegó, Portomuíños, Petaca Chico, Aquanaria and Codesa will be present at the fairgrounds with their own stand, where they will promote their excellent products and carry out various activities.
